Zucchini Bread

3 cups flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
3 tsp. cinnamon
3 eggs
1 cup vegetable oil (I use 1/2 c., and 1/2 c. applesauce)
2 1/4 cups sugar
3 tsp. vanilla
2 cups grated zucchini
1 cup chopped walnuts (optional)

1.  Preheat oven to 325 degrees F.
2.  sift together flour, salt, baking soda, baking powder, and cinnamon
3.  Beat in a separate bowl:  eggs, oil, sugar, vanilla
4.  Add in grated zucchini and nuts
5.  Add dry ingredients to wet, and mix well.
6.  Spread into 2 greased and floured loaf pans
7.  Bake 40-60 minutes.
